One of my favorite quick and easy go-to meals or snacks is overnight oats. I’ve come across several different recipes – each with varying ingredient ratios and mix-ins. After making several batches, I’ve landed on a mixture that suits my taste. This recipe is great for breakfast on the go or for a lazy snack or dinner. The base mixture is good enough on its own, but it's even better with some toppings. Plus it’s stupid easy to make.
Overnight Oats
1/3 c. oats (preferably rolled - not quick/instant)
1/3 c. milk (almond, soy, dairy…whatever you please)
1/3 c. greek yogurt (I like the added protein, but you could just double the milk)
2 tbsp. chia seeds (optional)
Method
Combine all ingredients in a container or jar. Cover and store in the fridge overnight – or at least for a few hours ( especially if adding chia seeds ). Toppings can be combined with the ingredients above or prior to serving. Enjoy!
Optional Mix-ins
Almonds + coconut flakes
Pumpkin + walnuts + cinnamon
Bananas + honey
Peanut butter + chocolate chips
Fresh or frozen berries
